My guess, based on both @NineBerry's comment and the clue from the original post ("the key is password, not pàssword !!!"):
The password for the cryptobin is something along the lines of "correct horse battery staple"; i.e., all lower case, no numbers or special characters (such as "ñ" or "&").
(Obviously it's not actually "correct horse battery staple", I'm just using that to illustrate my working theory at the moment. As for what the password is? Aside from "related to La Malinche in some way", I got nothin'.)
More than enough clues on this board. Look for something that looks like a pàssword and make it a password. Good luck!

Now, I grant you that perhaps the angle I'm approaching from is wrong. But rephrasing an extant clue is not going to do anything to ameliorate my befuddlement and irritation; indeed, it is doing quite the opposite.

It's so hard to help you without giving it away. I hate to ask, but have you tried just retrying things you have already tried? Maybe you missed a permutation because you thought you already tried it and missed it or didn't refresh the page?

also, the original post gives strong hints about what the password is and the format you should enter it in. That’s why no one is giving any more out other than to restate the original clue.
So, it'd be broken if someone had helpfully reclassified some of the wrong entries on the wiki between the puzzle being set and anyone trying to solve it?

Well, using only the "man, woman, both" line, I can see ways to assign 1 bit to some symbols and 2 bits to another; or 2 bits to each. But from the 27 input symbols, those will produce, respectively, a sequence of 34 bits, or 54 bits.
34 is 2x17, which doesn't seem like a useful series of tokens. 54 is 9x6, and there's a certain 6-bit alphabet that's been visible (but didn't need to be understood) during the first two steps, but all permutations i tried for that spit out uppercase, lowercase and numbers, which isn't what a keyword should look like.
If I use additional information from the riddle, I could assign 2- or 3-bit values to each symbol, but that'd produce 62 (2x31) or 81 (9x9)-bit sequences, which also don't seem like the way to extract an alphabet.
Don't overthink it, you do not need to deal with bits. You have identified the right amount of genders and you have the sequence now. Try finding a simple method that requires this same amount of variables to send a text.
I'll look at it more in the morning, but still stuck on where to go on the 3rd one, found wikipedia pages for maya codicies, script, glyphs, aztec codicies, nahautl, not too many symbols on the wiki itself. The maya codicies mentions dresden, madrid, paris, grokier. Or is it a Spanish wikipedia page I'm looking for? Still not sure where to get the 27.

I haven't found a list of 27, haven't figured out what to do with the 130 letters.

Not all alphabets use the same length for each character
Don't overthink it, you do not need to deal with bits. You have identified the right amount of genders and you have the sequence now. Try finding a simple method that requires this same amount of variables to send a text.
