If you completed 6 missions on Sun Jan 14 local time, before Sat Jan 13 18:30 UTC, and you don’t see your Second Sunday medal increment, please contact Support via the in-app “Settings” menu > “Report Problem” > Select the chat button on the top right corner and submit a ticket so that we can investigate further.

    Niantic has reported that they have fixed the issue, if the +1 wasn't backfilled they advise you to open a support ticket.

    This is a known issue and has since been resolved for anyone completing 6 missions moving forward. Please submit a support ticket via the app for assistance.
